Sift almonds and confectioner´s into a bowl and set aside.

Beat egg white and sugar on high speed until it builds stiff peaks.

Gently fold in the almonds and the confectioner´s sugar in three steps. Add food coloring if you like.

Fill the mass into a piping bag with a round tip and pipe macarons onto your
baking plate with a baking sheet. Let them rest at least for 20 minutes.

Lasst die Macarons mindestens für 10 Minuten ruhen.
Preheat oven to 140°.
